If you know a quicker meal than pasta with pesto sauce, please let me know! Pasta with store-bought pesto sauce has been the family staple ever since the first child started eating solids. Many times it is just pesto-pasta that has saved our dinner time when I have been able to put together a meal in 8 minutes. While the pasta was cooking I often prepared a salad to go with the pasta.
But why bother with the separtate side salad if you can mix it all into a one big salad bowl? I have no recollection when my pesto-pasta with salad turned into a pesto salad but it has been one of the family favourites ever since – and still is. This pesto salad includes some of our favourite ingredients: cherry tomatoes, olives and feta cheese. Not everyone likes rocket (or arugula), especially the children may think its flavour is too bitter. But no worries, you can replace rocket with fresh baby spinach.
This recipe feeds 4-6 people depending who is eating. If there are any leftovers, the salad keeps nicely in the fridge for next day.

Pesto Salad
Ingredients
- 500 g penne pasta
- 250 g cherry tomatoes
- ½ red onion
- 200 g feta cheese
- 1 jar green pesto sauce
- kalamata olives
- rocket
Instructions
- Cook the pasta until it is al dente.
- While pasta is cooking, cut tomatoes into halves and julienne the onion.
- Rinse pasta with cold water once it is done. Mix in the pesto sauce.
- Mix all the ingredients into a big salad and enjoy.
