Black Bean Fudge (V, GF)

Chocolate and coffee flavoured black bean fudge
Course: Dessert

Ingredients
  

  • 2 cans black beans (420 g)
  • 100 ml cacao powder
  • 100 ml melted coconut oil (natural flavour)
  • 15 dates
  • 25 ml boiling water
  • 1 tsp instant coffee granules
  • pinch of salt

Method
 

  1. Rinse the beans well and let all the water drip.
  2. Prepare coffee by mixing boiling water and coffee granules. No need to let it cool down.
  3. Mix all the ingredients in a high-speed blender until smooth, or use a stick mixer like I do.
  4. Spread the mixture into a bread form covered with baking parchment.
  5. Let it set and cool in the fridge for at least 2 hours or until you are able to cut it. We cut is as we go along and eat it.
